Daniel Dampt
This domaine, once run by Jean Defaix, is now run by son-in-law Daniel Dampt, with his able young son Vincent alongside. The winemaking at this domaine has changed little over the years, sticking with the simple but effective recipe of growing top quality fruit and allowing the individual terroir of each appellation to shine through. One advantage has clearly lifted the wines to the next level: the use of a newly built, state-of-the-art winery. Located on the outskirts of the small village of Milly beneath the Premier Cru Côte de Léchet, the facility features temperature-controlled stainless steel tanks that allow wines to be fermented at a constant 18º C. Its capacity allows for the production of 150,000 bottles per annum from 26 hectares of vineyards split evenly between Chablis, A.C. and five premier crus (les Lys, Vaillons, Cote de Lechet, Beauroy and Fourchaume). Success has followed quickly.
