Hervé Azo, runs this small, high-quality domaine of 15 hectares with the help of front man, régisseur Stephane Pommier, a hardworking and pleasant young gentleman. Out of a warehouse outside of Chablis, just off the Route d’Auxerre, the domaine produces Petit Chablis, Chablis and three Premier Crus, selling a portion each year to négociants.
Most all of the grapes are harvested mechanically, even in the frighteningly steep Vau de Vey where on of the domaine’s tractors flipped a few years ago. Organic fertilizers are used whenever possible. Fermentation is done exclusively using commercial yeast, and Pommier painstakingly samples various yeasts in small batches in a determined effort to find the perfect catalyst for each wine. In one case (Cote de Lechet), Pommier even removed the fine lees and cultured yeast separately from the main batch! He believes that the right yeast will accentuate the wine’s fruit. Domaine Azo strenuously objects to the use of wood. The wines are fined, but filtered only when necessary.
