Alain Geoffroy leads an 18-person team, including his wife Cathy and daughter Nathalie. The domaine is located in three buildings nestled in the northwest corner of the village of Beine. Most all the grapes are mechanically harvested and then pressed in either of the domaine’s two pneumatic presses or in some cases, a traditional press. After a ten-day fermentation, the wines are aged in temperature-controlled stainless steel vats at 20 – 21° C or in barrels and, depending on the cuvee, sur lies. The wines are fined and then twice filtered – Kiesselghur and Cartouche – prior to bottling. Bottling occurs early at this domaine, with Chablis and Petit Chablis bottled in early March and the Crus in early summer. For this reason, the wines are to be drunk sooner rather than later to embrace the fresh fruit flavors.
