Since founding his domaine in 1978, Sylvain Mosnier and his wines have quickly gained recognition among journalists and his fellow vignerons alike. Joining M. Mosnier in his cellars is a treat as, despite his very masculine presence, he is quite convivial, and his wines are of high quality. With the exception of a touch of oak in Premier Cru Beauroy (entirely from Troësmes) and a more extensive dosage for Chablis Vieilles-Vignes en Fût (made only in the best vintages), the wines are otherwise unadulterated. Petit Chablis is from 50+ year vines and manually harvested, very rare for this appellation. In addition to the Chablis Vieilles-Vignes en Fût, in every vintage there are two Chablis Villages: Chablis and Chablis Vieilles-Vignes, with the latter being made without the use of oak and coming from vines planted a half a century ago. In addition to the single hectare of Beauroy, Mosnier also owns .6 hectares of Premier Cru Côte de Léchét.
